My cousin recently sold the property east of Hico that had this fishing hole on it. We caught several like this one in just a few hours. Had to use 30lb test line to keep them from breaking off. Kept this one for dinner and threw the rest back. Great fun and I will miss my favorite fishing hole.

Can't beat fresh catfish like that in 325 degree peanut oil!!

High fence, low fence, no fence, it really doesn't matter as long as you're hunting!

You could feed a large family off that one fish.

Still looking for a S Texas quail lease spot.

Agree, gotta have at least 350 to start due to the temperature drop when fish gets added.

Peanut oil is too expensive unless you’re cooking for a massive amount of people. I usually cook for less than 10 people, strain my vegetable oil and use it three times. It cooks the best on the second run. I also think fish cooks best at 325 before you toss in a batch. I cut my fillets up into small 3” or less pieces and it takes about 7 minutes to get them crispy on my rig. I cook a lot of fish. Keep your heat down and save a lot of money on oil and the fish is better.

Channel cats are my favorite to eat food

Use to skin and gut them, put a light coat of butter, Lemon Pepper, Garlic and Black Pep wrap in foil in the oven for about 20 minutes an 350 degrees, for a single guy that was fine eating!

NOT when you are throwing fresh catfish in it that has not been frozen or in the refrigerator. grin

Yup
Peanut oil is not cheap but I love it cooked in it.

I've also learned over the years that cooking it between 325 & 350 the grease stays fresher longer. Keep it strained out good from small pieces of batter and run a large batch of fries or tater tots through it also helps to 'clean' the grease some between batches of fish.
