My neighbor had too much squash, so he offered us some. Seasoned with SPG with olive oil after slicing 1/4" thick. Topped with Parmesan cheese and baked @ 425 until the parmesan cheese was melted like the picture below. Used your recipe and made this last night. Oh my gosh it was great!!!! , definitely no leftovers to be found!!!! Social security (wife) , wants to try with zucchini, I like both kinds and of squash myself as she does. Thanks for the recipe!!!!

They are delicious. Sunday I made some fresh blackened Red Snapper topped with a crawfish cream sauce, garlic mashed potatoes, and made these and some sliced parmesan tomatoes like this as a side. The parmesan vegetables really compliment seafood dishes IMO.
