The last 2 processors I went to wouldn't take wild swine. Stated health hazard as the reason.

I don’t understand, you mean one pig ? Anyone who does a deer will do a pig, in my experience I used to hunt in Lee County, and there was a meat market there that processed wild game. We'd take hog meat to them and they'd turn it into really good sausage for just a little over $1/Lb. Gradually they raised their prices to about $1.25/Lb, which I thought was reasonable. However, they apparently had to keep game meat separated from commercial, USDA inspected, meat. Eventually they decided it wasn't worthwhile to keep a special walk-in cooler running just for game meat outside of deer season. They would only take hog meat during deer season. So, while it's probably true that most processors who take deer will also take hogs, In this case it was only while deer season was open. PostScript: A few years ago this place tacked on a 75¢/Lb "Inspection Charge" to clean the meat of dirt and hair. Apparently folks were bringing in meat that they'd laid on the ground or dropped in the dirt or whatever. At that point I started making sausage myself.

There is a place in Sedgewick, Alberta that will process anything you take them. They make really good sausage.

There is a place in Sedgewick, Alberta that will process anything you take them. They make really good sausage. That's good to know next time I'm looking for hog processing in Sedgewick, Alberta.
