Found a vacuum sealed bag of 6 filets of speckled trout we caught in Venice, Louisiana few years back. Quick thaw, little trimming and fried it up. Served with fries, ketchup, cocktail sauce and wife whipped up some tarter sauce, oh yeah.

I love specks, and the taste texture and mild flavor swings me to them more than even redfish. They are wonderful, and those look great!!

Yep. I have eaten a lot of different species of fish from our bays and the Gulf, some of them are REALLY good, but to me there is nothing like catching a mess of trout early in the am and frying them up. They have their own distinct flavor & texture, which I like. The only other fish IMO that holds a candle to specs are Triple Tails (Leaf Fish), Bearded Brotulas, and Mangrove Snapper.

My wife has told me several times tonight how good these came out. Think she wants all her fish pan fried like these, old bay seasoning, 3:1 flour to corn meal mix and little sea salt after frying. Made a real crunchy bite.
