Looks great!!! I have been having bad luck with chicken breasts lately? They taste like “rubber”
They say it is called “woody” chicken and the whole industry is trying to find the cause. I’m only going to start cooking halves or dark meat.

I don't know anything about that, this is really the only way I eat chicken breasts.

The skin on mine, halves or spatchcock, never gets crispy.

A couple? I'd say that looks like more than a couple. Looks fantastic though!

Nope no crispy skin.

Herbie, can you tell me what you were soaking them in and why? I cooked some Saturday but feel like I'm missing something.

That's a brine, it as some flavor but also moisture to the meat. That mixture is salt, honey, peppercorns, garlic, bay leaf and the citrus. That breast keep some decent moisture once it's done, while waiting for the dark meat to get done cooking. Only way I do chickens and turkey now.

I'm yet to have tried it personally, but from what I've heard, brining is a game changer in cooking chicken (or really, all poultry). I keep saying I'll give it a try, but never think about it until I'm getting ready to throw the chicken on the grill.

That looks excelletn. Going to try that brining method for sure. I'm still able to get some descent leg quarters for .79 cents a pound at times. To me thats a bargain for protein.

That's pretty good, I got the chickens for $0.99/lb.

Those look awesome. I`m not a fan of any chicken on a bone at all, but I`d have to eat one of those just on appearance.
