My daughter took a nice Oryx a couple months back and we got the meat back from the processor, wondering what is the best way to prepare the steaks. For some background at our house, beef steaks just get salt. pepper, garlic and grilled to medium rare. Venison get marinated overnight in soy sauce/Italian dressing/brown sugar/couple other things and then grilled to medium rare. Not sure what flavor Oryx have or if they are going to be very lean like a deer.

Thoughts? Suggestions?

I marinate the same as steaks but cook it like venison. Oryx is really good but still doesn’t have the fat that a ribeye does so you can overdo it if you leave it on too long.

Yep, season and cook it just like a thin beef steak the first time, and make sure it's rare to medium rare. They will be lean like venison. I would only marinate if you want to give it a slightly different flavor.

Season it and cook it to Med Rare at the most. Scimitar Oryx is slightly better than Gemsbok Oryx IMO, either way they are both excellent.
