Ok my SIL brought me a wild hog backstrap. I intend to use part of it for my Snack Sticks. So what are the suggestions
On what to do with the rest of it? Smoke it, bake it or?


some people like silver and gold
I like brass and lead with a little powder in between

The backstrap is the pork chops. slice into chops, pound with a meat hammer, Cavender's seasoning, and grill.

Here's one i use for pork chops

1 cup orange juice
1 cup ginger ale
1/4 cup olive oil
2-3 jalapenos chopped
1 garlic clove minced
1 sprig of fresh rosemary chopped

Marinate the pork chops for at least 24hrs. Salt and pepper to taste, grill over pecan wood

A nice, simple recipe that always turns out well:

Pork with Mustard Sauce

1 Lb Backstrap
1 Cup Port or Red Wine
1/4 Cup Spicy Mustard
1/4 Cup Brown Sugar
~1 TBSP Chicken Bullion
~1 tsp Corn Starch

I cook the backstrap in a pressure cooker for about 30 minutes to ensure that it's tender before anything else.

Cut the backstrap into 'medallions' and sauté them in cooking oil in a large pan
Set the meat aside.
Add Port or Wine and stir up the bits from the bottom of the pan
Add Mustard and blend it in.
Add the Brown Sugar & Bullion and dissolve them.
Mix corn starch with 1 or 2 TBSP of cold water to dissolve it, then add it to the sauce to thicken.

Add meat back into pan and blend with the sauce.

Serve it up

What I am thinking is. Cut the backstrap into 1/2 thick pieces and then cutting a slice I each one fora Jalapeño, then wrap them in bacon and grill them with my dove breasts that I am also doing that way.. this will be for our family get together Easter
