Doing a pork butt on my new smoker tomorrow. two questions, do you wrap (I normally do not) and do you trim the fat off (also normally do not).

I wrap after a certain amount of time. I do not trim any fat.

Before shredding, do ya'll remove fat layer? I never have, but probably should since grease flares up my acid reflux. I just mix it all together.

Some extra fat is sure good on reheated pulled pork. Cooked on a griddle or iron skillet makes some good carnitas.

that does look good ... we used to do pork butts all the time but we would slice most of it up (like a brisket) and any thing that came apart, we shredded.

I only wrap them if I get a stall in cooking temp and I never trim a pork butt or brisket.

No wrapping pork butts. Get a broth / grease separator. When it's done, the broth is delicious poured over the meat. It's also good in the baked beans with a little finely chopped pork.
