Not sure how this stuff gets published. Wrong on so many levels.

Heck, I'm contaminating some meat right now.... food

https://health.clevelandclinic.org/is-smoked-meat-bad-for-you/amp/

Quote
In short, smoked meat is contaminated meat.

“The smoke itself is a source of contaminants that can be harmful,” Culbertson explains. Harmful substances called polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines (HCAs) form when meat is cooked at very high temperatures.

“These compounds are created when fluids and fat drip from the meat onto the heat source and as a byproduct of the smoke,” Culbertson says. “Aromatic rings are formed, creating these harmful compounds that are transported to the meat from the smoke.”

The best tip is
Quote
Use hardwoods. “Home smokers should take care to choose wood that does not have resins, like pine and other softwoods do,” Culbertson advises. “Fuel choice should be of hardwoods only.”

Pine doesn’t seem like a wood I’d smoke with anyway

It's true. Smoked meats contain carcinogens. This is not new information, it's been known for years.

But.
I don't care. I like BBQ and I'm going to eat it. Just like I always have.

I get that. The article is loaded with misinformation, like smoking at very high temps (who does that?) and fluids and fat dripping on the heat source (what kind of smoker is that?). Then there's cold smoking cheese. This dietician obviously isn't a cook.

Now grilling, that's a different story, hotter than hades and that fat better drip.

Probably talking about grilling in regard to fat dripping on the fire, etc.
If'n yer burger ain't making that grill flare, you're missing a lot of flavor on the bun.

There’s more carcinogens in a baked potato than cigarettes, but they don’t tell you that because it’s bad for farmers and people don’t generally eat enough baked potatoes for it to be a problem
