Since I got all that burger out to make patties, we went ahead and baked the meatloaf ahead of time. It slices so nice when cold, and also makes amazing sandwiches too!

Meat Loaf is one of those unique foods that can vary so much when you're making it, what you have available, and what purpose it's gonna serve. Heck, ours is different every time if she or I make it, or we work together. Just food, and gone in one meal, or for company and needs to look pretty. In a big lump like this one, or packed into a neat pan and parchment paper to make perfect square slices?

We like a little fat in ours, so 80-90% fat seems right to us. The 93% is too lean and makes a really dense texture. We put it up on the silicone rack to drain while cooking also. The use of Ritz vs saltines is always a discussion, as the Ritz (or even Club crackers) makes it sweeter tasting. If you use saltines, cut down on some of the loose salt.

Our basic recipe, and we wing it if we don't have everything!! smile

Meatloaf Ingredients:
1-2 lbs ground beef, 80% to 90% lean
1 small onion, finely chopped
2 large eggs
1 garlic clove, minced
3 Tbsp ketchup (can add BBQ sauce too)
3 Tbsp fresh parsley, finely chopped
1/2 cup Panko breadcrumbs
1/2 cup Saltine or Ritz crackers
1/4 cup milk
1 ½ tsp salt, or to taste
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika

Meatloaf Sauce Ingredients:
3/4 cup ketchup (again, a squirt of BBQ sauce can be added)
1 tsp white vinegar
2 Tbsp brown sugar
1/2 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt
