The little lost roast that we found has been seasoned up, and resting for 3 days. Now for a good hot sear and long soak at low temperature. It's a MIL dinner tonight, since they won't go out to restaurants, and just to make her smile. smile

Yep, it worked!! Two thumbs up from both the Boss, and the MIL!! Love cinnamon, brown sugar, and butter in a sweet potato. I have permission to do seafood for myself tomorrow, 'cause they are having left-overs. YUM!

In the oven, I'm a firm believer in 450 degrees for 5 minutes times the number of pounds ( in this case, 5 minutes x 6#, so 30 minutes) then turn down to 225 degrees for about 2 hours until it reaches 125 internal temp. We all like medium rare, and it's not over cooked for the next day when you do leftovers. If your family likes med rare, then go to 130 degrees internal, and let rest the 15 minutes before carving. In the gas grill, it's very similar, but you have to experiment and see where your grill likes to run best.
