It probably needed a little more time for that shred without effort tenderness. It pulled easily but I had to kind of cut It up. Not tough but any means. Just needed a little more time. Next time I’ll also cut each shank in half to where they will fit in the bottom of the pan down in the liquid better.

They wouldn’t fit in my dutch oven at all like this. That would have made them better I think too.

Yeah. I’ve never roasted mushrooms but they needed to be cooked so I threw them in. They were better than the carrots lol.

How long did you cook them?
I need to try it. I usually just bone the shanks and put it in the grind pile.

They looked great, was why I asked. I love to use portobellos, if I bake them a long time. They hold up better.

I did 3 hours covered in that pan in the pic at 300. I basted them about every 45 minutes.
