After the tearing of the butt/shoulder in the bowl? Do you add yours on the side dish or bun? Or put in bowl? Or none at all?

Put this on Yesterday about 4 p.m. and was ready at 6:00 a.m. let it rest till 11:00 and shredded.

Wife cannot eat pork, hurts her stomach. Something about eating right for your blood type, so she is getting garlic rotisserie chicken with steamed Lima beans.

I like to lightly sauce after pulling, and then put sauce out individually.

I was born and raised on southern BBQ pork, and vinegar based sauces. I like it added to the pork when shredded, then different individual sauces can be used at the table. I also like Cole slaw on my BBQ sandwiches.

Most of the Texas and other western BBQ sauces are really heavy on the brown sugar/molasses and if too much is added to the meat it makes a gooey gummy mess. I like a little bit added when shredding, but not much. I definitely prefer to add heavy sauce to my bun when topping the meat!!

2 cups apple cider vinegar
2 tablespoons dark brown sugar
1 tablespoon ketchup
½ tsp cayenne pepper, pepper sauce, or Tabasco
1 teaspoon of red pepper flakes
1 teaspoon of ground pepper
1 teaspoon salt

Place all ingredients in a pan.
Cook on stove top at Medium heat. Bring to a boil.
Whisk together until sugar and salt are completely dissolved. Remove from heat.
Cool to room temperature.
Pour sauce into a jar or bottle. For best results, refrigerate one day before use
Shake well before adding

Just before I eat it , seems to get less saturated that way.

Since I like to use it for multiple dishes I sauce before I eat.

I always pull the meat after cooling slightly and remove and unrendered fat. Then I will give it a coarse chop and incorporate most, or all of the juices captured by cooking the last 3-4 hours wrapped in foil. After that I will add my homemade Vinegar/Ketchup based BBQ sauce to my liking and mix together. I vacuum pack and freeze what we have left over and warm it up Sous Vide method. If someone wants to add more BBQ sauce when they make a pulled pork sandwich, they can.

Cole slaw on the pork sandwich, and sauce on the bun, you truly are a southerner! I finely chop some of the pork and add it to the bbq beans.

Put it on the side, to each his own. Some like it plain, some like sauce some like to make tacos out of it.
