A six quart will do 4 big pieces of chicken. I've found the brand doesn't matter as much, but we have a powerxl that does a great job.
Ultra MAGA '24.

I can't tell you which one to buy, but I can say decide on the size you want and get one bigger than that. I have a Ninja Foodi and I love it. It does a lot of different things, but it's only me. If I was cooking for a family it would be a real challenge. I have the 6.5 qt so the 8 qt version might work for you.

I can tell you one I would not get, Cuisinart. I bought it for it's appearance as far as blending with the rest of the appliances, and the name. I think they make good products. We've loved everything we have cooked with it. However the basket, according to the manual, isn't dishwasher safe. It is a PITA to scrub clean. I'm probably going to start putting it in the DW anyway.

Be observant,
There are ?"Air Fryers"
and there are Multi use Units (we have both) and find the singular use " Air Fryer" to be the most efficient.

We have the Power XL grill/airfryer. So far so good, just two of us. A lot of trial and error.

Interesting, do you put down parchment paper to catch the cheese to make clean up easier? The wife said to just make sure and use tooth picks to hold the sandwich together but no paper needed. I guess you should be careful not to overload with cheese.

Ours gets used almost daily. Air Fry setting on this works better than it does on our stand alone air fryer. I can cook a dozen thighs on the grill and leftovers air fry for a few minutes and the skin get’s crispy without drying them out. Sweet potatoes, cut fry size shake in a bag with a little olive oil and then a light coating of seasoned flour and air fry. Excellent! Ninja Foodi XL 6 in 1
