In honor of a special day, I had to have Reuben stuffed mushrooms, with home made Thousand Island dipping sauce. Mixed all the meat, kraut, cheese, and sauce - then overstuffed. Girls wanted traditional cream cheese, cheddar, sausage, Panko to go with their beef stew. Boy, it was good!!!

I love good stuffed shrooms and this post opened my mind that I can put other things inside a mushroom besides Spinach or Crab meat

It was delicious. The real secret to good stuffed mushrooms it to get them done, but not over-cooked and mushy. Small ones around 20 minutes, and large ones or lots of stuffing takes about 25. There was already plenty of sauce in the mix, but having it as a dipping sauce just made it that much better. Pork and seeds stuffed inside, with hot Chinese mustard is great also.
