Crappy picture perhaps, but worth it. Had two awesome hunts with MWO (Thanks MWO!) outside Amarillo for the last weekend of the season. 5 Man limit on Saturday, 8 man limit on Sunday. Tons - tons - of birds all around. Anyway, I kept as many as the hearts as I could get. For the first heart dish, I stuffed the cavities with hatch green chili goat cheese from El Camino de Las Cabras (San Angelo, TX). Rubbed outside in olive oil, salt, pepper.
