How long will vacuum sealed venison keep in the fridge after thawing?

It can last quite a while. Do a seach online for "wet age beef in vacuum bag" and you'll see different opinions for anywhere from 6 days to 6 weeks!!

I personally age venison a week in my cooler before butchering/packaging. I have taken frozen/vacuum sealed meat and let it thaw in the fridge to be cooked up to a week later with no problems.

It depends on how it was treated before it was frozen. If it was fresh and not subjected to excess bacteria then I would say a week. If you bump that limit, then definitely give it the scratch and sniff test. A lot of factors can enter into safety. What's the temp of the fridge? How was it treated in the field? Lower temps are obviously better. It's hard to give a very precise number of days without the personal experience of the situation. Trust your nose.

The deer was quartered and on ice quick, drained of water constantly and added ice daily, aged 6 days that’s way. Then cut up and food savered.
Put the frozen roast in the fridge in Thursday or Friday but never got around to cooking It this weekend. I work nights so It may not get cooked until Friday.

Depending on the temperature of the fridge, it probably took a couple of days to thaw. I would think it would be OK but as mentioned, I would give it a good sniff before cooking. I do that with all meat products anyway. Let me know where to send flowers just in case. grin

You could take advantage of that 'delay' and marinade it for the next couple/few days in Worcestershire/red-wine/soy-sauce in a zip-lock bag - till you have time to cook it up - would turn out divine!
