The girls only wanted that leftover pork BBQ tonight, so left me to make Reuben's for myself. Used up the last of the corned beef and 'kraut, so guess I'm having one for lunch tomorrow also!! Oh darn. smile

These are fresh, and in the little Fry-Daddy. I usually buy the Idaho brand crinkle cut ones for baking.

If I know what I'm doing for dinner a day ahead, I like to make fresh fries. Only costs us $15 for a 50# box of perfect fresh ones from the cellar. They stay good for months in my basement at 50-56 degrees on the concrete.

The secret is to wash them good in cold water, and even soak overnight in the fridge if possible. Twice fry them at 300 degrees first, lift the basket up and raise temp to 375-400 and fry again until golden and crisp!! Salt them right out of the fryer, so it sticks.
