Seasoned for 24 hours out on the shelf in the garage (34 degrees), and brought it in this morning. Eight hours at 225 degrees, pulled at 195 while I baked bread and fixed sides. Melt in your mouth good, and we ate until we were stuffed. Got 4 more meals out of it also!! When Prime brisket is $2/lb cheaper than hamburger, our system is screwed up!!!

Outdoor smoking would be hard at those temps. Bet a pellet smoker would use at least twice the pellets

Yep. Waste of propane too. I normally have to run my grill with the middle two burners off and the outside ones on lowest setting to maintain 225-240 degrees. Tried it last week and took all four burners on at about 1/3 setting. I decided it would be better to smell it all day in the house!!!

Did you have it covered / sealed in foil while baking?

Kept it in foil for seven hours. Opened for last hour. Then wrapped back up to rest while doing the rest.
