Is there a giant difference in the eating between the Cows and the Bulls? Do you have to grind bulls even if they are in prime shape? Never have shot one but I'd love to have a free range, middle of winter Bull head /shoulder mount, and hide to make a full length Buff coat ! On the other hand would like to utilize all the animal for food, Y'all that have killed them please let me know !

We have not taken a bull but have friends that have, there is a big difference in the meat just like cattle.
We hung our cows for 14 days at least and they were great, did our own processing.
The processor I talked with picking up bulls and cows in the field said he likes to hang them at least 10 days but longer is better on bulls.
I believe it also depends on the age of the bull, young ones are great- older not so much for steaks.

Big difference genetically speaking. Buffalo are generally thought to be any of the Cape Buffalo species, or water Buffalo. Bison are more related to cattle and yaks, but also have their own genus. Early settlers didn't know any of this, so just called them buffalo. Over here now, people will know what you're talking about, either way!

Yep, bison. I have a couple friends that raise them (and hunt Africa too), and they get pizzed if you call them buffalo!!

I’m gonna call them Buffalo or American Buffalo.

Cape Buffalo are Cape buffalo.

Water Buffalo are Water Buffalo.

There are no native buffalo in the new world. Most (virtually all) bison served in restaurants is uncastrated bulls. And if you’re wanting a full length coat you’ll need more than one bison.

There are a few ranches in Texas that specialize in "super exotics" that also offer water buffalo hunts.

A good friend shot a cow bison (on a hunt sourced through this forum) a few years ago and the meat was great, very similar to lean grass-fed beef. Totally worth it!!
