I called it heavy duty because it is quite rich. I posted this last year. This recipe my mom came up with decades ago has been the annual deal ever since. I may experiment with jalapenos this year instead of Broccoli. If she were still here I bet she would approve. Also, frozen broccoli and cottage cheese doesn't come in these size containers. Just improvise.

2 boxes Jiffy cornbread mix

4 eggs

1 ½ sticks butter or margarine

10 oz. Box frozen broccoli (thawed)

10 oz. Carton cottage cheese

1 med. Onion chopped, (optional)

Blot water from broccoli and chop it up.

Melt butter in 13x9 pan

Pour melted butter into cornbread mixture and whisk, then return to pan.

Bake at 350 for 40-60 minutes

I heat the butter up to fairly hot in a 350 degree oven. When I pour it back into the batter it sizzles. We still spray the Pyrex with aerosol oil smile , but probably non necessary.

I can't imagine who came up with this concept. However, for several decades it has been great!
