I’ve ate bison before, but really don’t remember how it was. So, how’s it fit table fare as a replacement for beer & venison? How much meat does a grown bull yield?

They have a lot of guts, heavy bones and hide; figure 30% or so of live weight will be lean, delicious table fare.

Eat it as close to rare as you can handle, otherwise will be tough.

Extremely lean.

Really depends on if grass fed or feed out.

What I have had was about like grass fed beef, if you like that you will like buffalo. Fed out will be a bit better with a little more fat.

Not sure where you all got your bison but ours have been great. It is just like grass fed beef and we aged ours for 14 days minimum and did the processing ourselves. Would love to draw a Wyoming bull tag and get another one!

Makes the best hamburger meat you’ll ever eat. The steaks are good but tough. I’ve shot a couple and On the second we kept the T bones and ground the rest up.

Best burgers I have had from it were from Wenzel Lonestar Meats in Hamilton. 25% Bacon that is heavily smoked (3X through the smoker) so that you can cook it on a foreman grill and it tastes like you cooked it over a good bed of hardwood coals .

I used to bring a cooler full of corn fed bison steaks home from Nebraska every year, they're good. Like mentioned, they're lean. Treat them like deer meat and enjoy. Salt/pepper/hot cast iron skillet/med to med rare.

What I have always figured is that if they are so good eating why are there not more places raising them?

If a place happens to have a bison burger, I always order it. Would like to try a steak or some other form though at some point.

I have had a few bison ribeyes at various restaurants that were delicious.

Hard to fence in bison, they can pretty much go where they want without a HOT wire keeping them in, or stout pipe fence.
