Got these babies out this morning, cleaned them up and seasoned heavy. Wrapped and resting for two days, then they're the stars of the show. 16# of Prime top sirloins!! Got a couple guests who only do fish and seafood; might introduce them to the wonders of redfish throats!!!

Those look pretty good. I'm having boudin stuffed flounder so there's almost zero prep involved, other than catching and cleaning the flounder.

Feeding the locusts at our house is a lot like March Madness. You go thru the various rounds of adults, kids, then the grandkids. They are on to the wine, beer, pizza, snacks, and all kinds of poppers and cheese sticks with jabenero ghost pepper sauce eliminations!!!!! Think I'll stick to food and rum/Coke.

Feeding the masses. Scrambled cheese eggs, sausage, tortillas, 3 kinds of sweet breads and muffins, juice, coffee, and milk. If you can't fix a breakfast out of that, you're on your own!!

Three gallons of twice-baked potatoes, one regular and one garlic, ready to go in the oven. Running out of counter space, and feeding the starving masses with snacks to make it another hour until dinner!!

Im 4 hours in on a Christmas Day brisket, a 15 pounder. Had a piece of cold leftover 5 meat little ceasers tonight.
