What kind of cheese do you use in your jalepno bacon wraps? Can you do them in the oven and what temp?

I still prefer cream cheese, but also like Oaxaca or Pepper Jack.
Yes you can do them in the oven, but the bacon on the bottom doesn't get crisp like I like mine. Even cooked on a wire rack.

I use mozzarella in mine. You can also get a pkg. of frozen breaded mozzarella sticks and stuff one in each pepper, wrap with bacon and grill or cook in the oven for 20 minutes at 400 degrees.

I've switched to the flavored cream cheese they make several flavors and really add to the pepper & bacon.

Several things to do to make it easier and better. 1. use regular sliced bacon, instead of thick-sliced 2. pre-cook your bacon a little, and it wraps better and gets crispy on a wire rack 3. mix your cream cheese and grated cheese or seasonings, place in a zip-lock bag, cut the corner off and squeeze out like a piping bag. I get tired of the cream cheese and use extra sharp cheddar from time to time. I enjoy them spicy, so my wife will cut the Jap in half long ways, Leave in the seeds put cream cheese and sprinkler extra sharp grated cheddar cheese on to the cream cheese, very good combo and wrap with thick cut bacon. Put it on the grill

FYI I cook mine in the oven at 400 degrees for 20 minutes, if bacon needs to get crisped put it in the broiler for about 3 minutes.
I put on a thin layer of Cream Cheese first, then add whatever meat ,shrimp, crab, chicken or pork then jazz it up from there. If I am going with shrimp, crab or chicken I like to use Pepper Jack cheese on top then wrap with bacon. with brisket or leftover steak Sharp Cheddar cheese.
Couple of different ways you can prepare them. Easy way cut them in half and stuff them, then either a 1/2 slice bacon on top or you can just add crumbled bacon bits on top. Other way and my favorite is to take the whole pepper slice it almost halfway across the top, then slice it down to right at the tip and filler up.
