Or Spencer, who’s a lot like an old woman named Mawmaw Thibodeaux-Landry and I’m sure can bare-knuckle box an alligator but I’m doubtful on the whole Holy Rosary in Cajun French thing. But I bet he knows someone…..

Look up Justin Wilson gumbo recipe. They don’t come more Cajun than him and his gumbo recipe is great.

I cheat and used roux in a jar.
2 cups of onions, celery, bell pepper chopped finely. Cup of parsley 1-2 tbsp Cajun seasoning (I usually sprinkle on the veggies while the soften) 1 tbsp of cayenne Jar of roux Picked chicken meat (I get a rotisserie chicken for the store and pick the meat. Super easy!) 2 packs of andouille sausage (I cube mine pretty small so they are bite sized, and skillet cook them prior to putting in the pot.) 2.5 boxes of Chicken stock
After the veggies are sautéed and seasoned, add all the meat, and roux. Cover it all with chicken stock and bring to boil. Once it boils, reduce heat until a simmer for several hours.
Serve with French bread and file if you so choose.

But I bet he knows someone…..[/size]  I don't have a written recipe for my gumbo, but the Cajun Ninja on YouTube does. He has LOTS of good recipes.

I got my recipe from my Brother-in-law's aunt. Her last name wasn't Thibodaux or Landry, and I don't think she could box an alligator, but I bet she could have recited the Rosary in Cajun French.

I put beans in my chili. But I think I'll say "NO" to corn (or carrots) in the gumbo. A line has to be drawn somewhere…

You can put any kind of meat in a gumbo, just don't cross the line with the vegetables and you can still call it a gumbo.

There's a whole lot of people that try to change up stuff and they end up unhappy with the results. I can't tell you at the ones that try to put goofy things in cornbread then they always say " I've tried and tried to make cornbread like your granny used to, and I can't seem to make it taste like hers did. ." Don't be putting stuff in a recipe that doesn't belong, and cook it in the same old fashioned difficult way that the old people cooked if you want the same results.

Recipes are a good starting point, if you do not like something leave it out and if you like something else put it in.
Like said above if you want to make just like someone else follow what they do exactly.

I can't tell you at the ones that try to put goofy things in cornbread then they always say " I've tried and tried to make cornbread like your granny used to, and I can't seem to make it taste like hers did. ." Don't be putting stuff in a recipe that doesn't belong, and cook it in the same old fashioned difficult way that the old people cooked if you want the same results.  Not saying different is bad, but just different…. Don’t do things differently and expect the same results…
