I wanted scrambled this morning, and she wanted fried eggs. Settled the matter by grabbing two baking tins, and I made them side-by-side in the oven! 350 degrees, and 20 minutes for mine, 25 minutes for hers. Jalepenos, onions, ham, cheddar, bacon. and sausage in mine. Put ham, bacon, sausage, extra cheese, and two eggs in each of theirs. Win-Win for us both, plus I can pile Pico de Gallo and hot sauce inside of mine!!!

The best thing about making enough for left-overs?? Being able to drown them in sausage gravy the next morning!!!

Great looking breakfast. Do you cook the sausage and bacon before blending it in with the eggs? By the way, the scrambled ones look like the ones I would grab first.

I chopped up a bunch of left over ham I had. For the bacon we typically cook about 4# at a time, then freeze it in a ziplock bag. For the sausage, this time I cheated and used a couple links that were left from breakfast a couple days before.
Jimmy Dean's has packages of pre-cooked meat in the refrigerated section, both sausage and bacon/sausage mix. That makes it super easy, but they are a little salty for the girls. I usually keep one of those in the freezer for easy omelets.
