We are having a family get together this weekend and having a friendly chili cook off, so I’m looking for some good chili recipes if you don’t mind sharing. I like spicy but most people don’t like it as spicy as me. Also I’m cool with beans or no beans.

Coarse ground chili meat, onions, tomato paste, and a can of re-fried beans to thicken after the cooking is over. Regular seasons.

I use, Carroll Shelby's Chili Kit. You can make it as hot or mild as your want.

I tried adding breakfast sausage to my chili a few years ago after several guys I worked with said they use it in theirs. It turned out really good and I never make it without it anymore. My son tried using it in his and he`s a believer to. I use 2 lbs. of ground brisket and 1 lb. of hot sausage. I add all of the ingredients below and 3-4 Tbs. of the Morton`s Chili Blend, depending on how hot you want it. I also add 3-4 chicken bouillon cubes for salt if needed. I have already made this exact recipe 3 times this year and it is awesome.

If you want to go traditional, buy a 2 pound cheap roast and cube the meat in 1/4 to 1/2 inch cubes. Use old Gebhardts chili powder recipe on Google. The recipe is tried and true and older than most people on THF.

The Gebhardt's recipe looks good, although I'd add some cayenne and cumin to the seasoning list and/or add a couple of cans of Tomatoes & Green Chili

I like Chugwater Chili mix and moose burger but betting you don't have either down there. I add roasted green chiles, Big Jims this year but Anaheims would work for good flavor without the heat.

Traditional Texas Red for me, no mixes unless in a hurry.

Dried Chili Ancho, Pasilla, Guajillo, New Mexico, Arbol, Morita (Chipotle), Tepins, fresh onion & garlic, water (or beef broth), and carne.

Cut meat into cubes, dust with fajita seasoning, brown in a Dutch Oven, then add the chili mixture and simmer until fork tender. Add S&P, Cumin, Chili Powder to taste. Serve with cornbread, tortillas, or rice.
