I think there’s a fine line between necessity and the weight of your pack and gun and the impact it has in your ability to get out of a place and maintain your energy levels. I hunt canyon land so my pack usually consists of:
-binoculars -first aid kit -knife -paracord/compass -fire starter -deer call -head lamp/flash light (hand crank kind with a usb charger) -chapstick and dude wipes -zip ties & pen -one small foldable space blanket -balaclava & gloves/beanie -water pouch/camel pack -toilet paper -hand warmers -Small radio
Everything else I’m carrying on person (wallet, phone, gun, gun stick)

Paracord, zip ties, marking tape, fire kit, first aid kit, knife, headlamp, TP, compass. Usually a couple of snack bars and a bottle of water.
If I'm going to be field-dressing/quartering, I make these kits out of a folded gallon bag that includes two pairs of the thicker surgical gloves, folded blue paper towels, a folded contractor grade 55 gallon trash bag (to use as a quick tarp and keep meat clean) and a small pack of anti-bacterial wipes. I keep these ready to go in my hunting box so it's easy to grab a pre-made kit and just shove it in the bottom of my backpack where they don't take up any space.
If I'm hunting more remote, I will add water filtration and iodine tablets, a bigger first aid kit.
These lists don't include camping gear or clothes.
