Holiday party coming up and I need to take a finger food type dish. There will be lots of cheese trays, veggies, sausage platters and jalapeno poppers.

I'm thinking of making Mexican cornbread mini muffins.
Good chance someone there has never had corn bread, yes it may happen.

I'm going to use a Corn Kit Honey sweet mix but should I use roasted Big Jim chilis or jalapenos?
I also like sharp cheddar, would that work or should I go with a more mild, easy melting mix of cheese ?

Any other finger food ideas that don't have to be kept hot, something kind of meaty perhaps ?

Pics are appreciated of any other ideas.
And let's see your party favs even if they aren't finger food types.

I like tortilla roll ups, super easy: cream cheese, grated cheese, canned green chiles drained, rotel drained, package of taco seasoning, mix it all together. Then you spread it across a package of tortillas, roll them up and set in the fridge for an hour or so to set up. Then you cut them about 1/2" bit size pieces. They are great cold or served at room temp.

A dessert version. Smear one side of a corn chip with peanut butter. Melt a bunch of chocolate chips optional is to add a little cayenne pepper to the chocolate. Dip the prepared corn chips in the chocolate place on parchment paper, when finished place in the fridge to solidify the chocolate.

Spinach dip in a bread bowl is always good. Some cut bread squares to start, and eat the bowl as it empties.

I do a lot of water chestnuts wrapped in bacon, and baked until the bacon is done. Can't over cook them, and tasty with a toothpick in them.

Rolled up ham and cream cheese is a nice finger food that doesn't matter if cold or allowed to warm up.

Big bowl of iced cold shrimp, and plenty of hot horseradish chili sauce.

The new DOT's seasoned pretzel sticks have been a big hit with our friends too

Seven layer bean dip, shredded cheese, sour cream, pickled japs, black olives, pico and tortilla chips

The new pita chips are a good substitute for corn chips too, for any dips

I know it's not fingerfood but try some mac&cheese made with blue cheese and bacon. My SIL cooked a batch for a steak cookoff and it was in my top 10 of best things ever eaten.

I've made these in the past, and they went over pretty well — https://www.food.com/recipe/appetizer-grape-jelly-and-chili-sauce-meatballs-or-lil-smokies-73362

The sauce is super simple, mix grape jelly and chili sauce. It's a 'sweet/sour/tangy' flavor.

If you don't want to make meatballs, you can perhaps buy them or use the Little Smokies sausages.

Smoked cream cheese. Lots of recipes on YouTube for salty or sweet.
Bacon wrapped jalapeños
Summer sausage and crackers
Queso. I do white velveta, can of rotel, half clump of fresh chopped cilantro
Get fancy and smoke ribs, or pulled pork sliders.

Trial run on the Mexican cornbread today, I have some Anasazi beans on the stove.

Got snowed in by a surprise storm for 2 days, we had just gotten there and the pantry was almost bare except 5 cans of Wolf Brand and some Velveeta in the fridge. With some cornmeal, oil and with Google recipe help, we made corn chips. By the time we could get out, the grocery store was bare,
