Too much controversy, almost as much as barbecue
The noodle dumpling people call what my family has made for years " sinkers " and scoff even though they've never tried em. Most also don't know of spaetzle and have never had any. ( proper spaetzle is more or less a grated dumpling, not the pasta shells they sell at the store)

Take a chicken and cook it in a pot of water , debone chicken when it is done and put it back in pot. Put 2 cans of cream of chicken soup in there . Now get a package of flour tortilla's and cut them up and put them in . Pepper and salt , good for cold day

I have been using Paula Dean`s recipe that I got on line several years ago and we really like it. The dumplings are super simple and easy to make. I never ate chicken and dumpling`s growing up because my mother and grandmother put the whole chicken in it and I wouldn`t eat anything that had any kind of gristle at all. I finally decided I was going to make my own(my way) for my wife about 10 years ago because she loves chicken and dumpling`s and this stuff is great. This is an easy recipe to make. Enjoy. https://www.pauladeen.com/recipe/chicken-dumplings/Ingredients4 quarts water 1 (10 3/4 oz) can condensed cream of celery or cream of chicken soup( I add one of each) 1 teaspoon Paula Deen's House Seasoning(salt, pepper and garlic) 2 chicken bouillon cubes( I use Better Than Bouillon chicken base) 2 bay leaves 1 large chopped onion 3 ribs chopped celery 1 2 1/2 lb chicken( I use boneless chicken breast) 2 tablespoons (optional) corn starch Dumplings2 cups all purpose flour mixed with 1 teaspoon salt. 3/4 cup ice water DirectionsChicken: Cut up chicken, but do not remove skin. The skin and bones can be removed later. Place chicken, celery, onion, bay leaves, bouillon and House Seasoning in water and cook at a low boil for 30 to 45 minutes, until meat begins to fall off the bones. Remove skin and bones at this point, along with bay leaves. Return chicken to pan. Prepare dumplings and set them aside for a few minutes. Add cream soup to chicken and continue to boil. If desired, you can thicken the stock at little by mixing 2 tablespoons cornstarch with 1/4 cup of water and adding it to the stock. Drop dumplings into boiling stock. Never stir dumplings. Shake the pot gently in a circular motion to submerge dumplings in stock. Cook until the dumplings float and are no longer doughy, 3 to 4 minutes. Do not overcook. Dumplings:Put flour/salt mixture in a mixing bowl. Beginning in center of flour, dribble a small amount of ice water. Work mixture with fingers from center of bowl to sides of bowl, incorporating small amounts of water at a time. Continue until all flour is used up. Batter will feel as if it is going to be tough. Knead dough and form into ball. Dust a good amount of flour onto dough board and rolling pin. Roll out dough, working from center. Dough will be firm. Roll to 1/8 inch thinness. Let it air-dry for a minute or two while you return your attention to the boiling pot at the point at which you add the canned soup to the chicken mixture. Cut dumplings into 1-inch strips. Working with one strip at a time, hold strip over pot, pull it in half, and drop into the boiling stock. Remember, do not stir after dumplings have been added to pot. [/QUOTE]

It came close but I caught it. Gonna take a bit to learn the burners and heat settings but in my rent house the gas stove there would never even boil a pot this size half full of water.
It came out good. So I passed.

I don't have a written recipe, but I'm sure mine is similar to most and real simple.
I boil a whole chicken with onions/garlic/celery, debone chicken & add back to pot. Season with salt & pepper. For the dumplings, I've used a ton of canned biscuits and tried several from scratch recipes.....but I prefer making fluffy drop dumplings from Bisquick. Just mix Bisquick with water and drop the dumplings in with a spoon. Simmer until they are done and it thickens up a little, then I add more black pepper and just a little Worcestershire.
When I make a bowl for myself I like to add a little more Worcestershire & a little Louisiana Hot Sauce or original Tabasco.

Mom’s Bohemian dumpling recipe. [*]Ingredients : 2 eggs, 1/2 cup milk, 2 cups flower, 3 teaspoons baking powder, 1/2 teaspoon salt. [*]Beat Eggs and add milk. Sift indry ingredients. This will form a stiff dough. Knead like biscuits until smooth. Pinch off enough to make a dumpling, about the size of a small apple. Dust hands with flower and salt and roll dough into a smooth ball. Roll all dough before starting to cook. Drop into boiling salt water, ( about 5” deep). ( spray cover on kettle with Pam to keep dumplings from boiling over) . Use about 1 teaspoon salt to a quart of water. Dumplings fall to the bottom of kettle at once, pry loose with knife or spoon, then cover tightly and do not uncover for ten minutes, they must boil constantly, but not rapidly. As soon as dumplings are cooked, remove to platter or bowl, cut each in half with two forks and serve at once. If not torn in two the tend to get soggy. Makes about 7 nice dumplings ( baseball size). [*]With our big family, mom would usually make a double batch. What we didn’t eat with chicken or beef roast, she would reheat for breakfast and we would put cinnamon and sugar on, oh the memories!!!! Hope someone will try and let me know what you think, again this is a bohemian recipe that I finally located in my copy of her recipes. Made it last night with chicken and gravy, and this morning with cinnamon and sugar, turned out just like mom’s!!!!

Love them. I found that keeping the pot barely simmering when adding and cooking dumpling helps with the overall texture.

Grandma always used homemade biscuits either from scratch or bisquick as well. Chunky dumplings. Not sure what went into the chicken and sauce but it was good.
