I understand that this is subjective, but looking for opinions. Might be a little confusing.

Here is my situation. I currently mostly use a 30-30 for deer (as my shots aren't over 150 yards on my lease). I recently (over the last year) purchased 2 rifles (a 257 weather mag and a 300 Win mag). I also have my dads 30-06, since he past away.

Here is where I'm stuck.
I was planning on purchasing 2, Maven RS.1 - 2.5-15X44 FFP scopes for the .257 and 300, and "retiring" the 30-06, as a keepsake. But I recently just was gifted a Trijicon AccuPoint 2.5-10x56, and had thoughts of putting it on the 30-06, since it is a much older / smaller scope.

I don't plan on taking any shots over 400 yards regardless which rifle I'm shooting (hunting scenarios).

What to do, what to do...?

Stick with your plan, it is solid.

Good plan. Shooting your dads 30-06 will be a nice connector and will be more appreciated when you get to use it, rather than if in the safe. Keeping the family firearms in use is something I love doing, personally. My two cents.

The answer here is clear. Hunt with your Dad's rifle. You'll appreciate it much more in the field than you will in the safe.

Did you consider putting one of the Maven's on the 30-06, should you decide to hunt with it?

That Trijicon he is putting on the 30-06 is a really nice scope.

Yes, prolly higher overall quality. Some other considerations are obj size and X. Myself, for a hunting scope good to 400 yards I'd prefer the 14x. Also, the 56 mm obj is huge, and for hunting, my preference would be the 44. I have a 50 mm obj, and compared to my 44's it is heavy, and bulky.

I have a trijicon 2.5-10 scope and absolutely love it. it's lighter than it looks. No real adjustments or features but great for plinking and hunting.
