Local processing plant is not taking anything new right now. I know several are in similar situation

Anyway I usually take 3 deer per year. Looks like I’ll start butchering my own. Looking at a lem #8 which
is a .5 hp. Cost about 380.00. Is this big enough? What other units do you recommend?
I know how to cut a deer up. Never done grinding and or sausage making......which I intend to do.
I know there is a whole bunch of experience and wisdom here...... please share some.

We use a #32 hand crank meat grinder. A kid can grind it faster than 2 adults can cut and trim the meat to keep him busy. Mine is over 40 years old, so my cost doesn't matter. A good one is less than a $100. If making stuffed sausage, buy a good one, this will be close to a $100. These look like a barrel with a press that screws downward.

Want a real good one, look for an antique Enterprise sausage stuffer, that doubles as a fruit press and other things. There is a seller on eBay that lives in Rowena, Texas that sells parts and refurbished ones. Just west of Ballinger on highway 67. It will cost you up to $320 plus shipping, but your great grandkids will be able to use it. This is my brother-in-laws…. We’ve been using it for years. It usually has 4-12+ animals a year put through it….

Get a stuffing horn and bags, hog rings and pliers for hamburger, much easier. Mine is 3/4 hp but have used a 1/8 HP for years. 1/2hp should suffice. The $$ saved will pay for your equipment!!

I have a LEM #8 and it will be fine for 3 deer a year. I would suggest that you get the foot switch to go with it, very handy to have. I also have the cutlet device for it and it does a pretty good job.
I catch beef roasts on sale and grind my own ground beef. Way better meat, no added water (ice they used to keep their equipment cool) and way less greasy. You can make it as lean as you want or with as much added fat as you desire.

I guessing the "cutlet" device is a tenderizer/cuber. Great piece of equipment. Mine is the manual crank type. I run all steak meat through the tenderizer 3 times. Wish I'd have bought it years ago. Cleaning it is a chore but worth the effort.

I use a kitchen aid mixer attachment. Not that I’m recommending that. Just saying that you don’t need much to grind 3 deer per year. No reason to over spend on a big powerhouse meat grinder.

If you bought the meat sacks to put hamburger in, you will need a stuffing horn.

It is a tenderizer that makes cube steaks. It also comes with a jerky slicer attachment.

The unit I ordered has 3 stuffing horns. Biggest one is 1 3/8”. Will that pack a breakfast sausage or hamburger
Type tube?

The foot control switch is nice. I have a small LEM grinder. Actually a friend bought it, and I sort of inherited it because I wound up using it more than he did. https://www.lemproducts.com/product/8-575-watt-countertop-grinder/butcher-meat-grinders

I really thought it would be too weak, but I've been pleasantly surprised. I don't process huge batches, and I don't use it even once a month. I shoot hogs and when I get about 40-50 Lbs of meat accumulated I get it out. With me cutting up semi-frozen meat and my wife feeding the grinder and putting the ground meat into quart ziploc bags, we both stay busy.

I know some grinders are rated in horsepower, and some just show the number of Watts supposedly used. At roughly 750 Watts/HP a 575 Watt unit *should* be equivalent to around 3/4 HP. I doubt that this unit is really much over 1/3 HP in truth, if even that. Still, it works okay for what I'm doing.

But the foot switch is certainly a handy thing, particularly when I'm working alone.

Even though grinders come with stuffing tubes, I recommend a separate stuffer. It is much easier to use & control the output.

Wow. Talking quick delivery. Ordered the grinder and tenderizer early Friday and both delivered today.
I’m impressed with the Lem grinder just looking at it. The tenderizer is a Weston hand crank deal that will take up to 1.25” thick cuts. Very sturdy and well made.
