A little stubble has never been a problem. Don’t eat the skin. The shin becomes had and acts like a iron skillet or Dutch oven.

Did you trap the hog? The reason I ask, is I have a friend who swears by catching them
and feeding them for a week or two.

This hog was trapped by a neighbor. He runs several traps around here and any time I need a pig all I have to do is ask and it will be delivered if has has some.

Using mesquite mostly with some oak.

Rain last night and wind today has really kicked my rear trying to keep and maintain the temperature.

This is the pig after 27 hrs. Kept turning the pit trying to get control but Ended up using a sheet of plywood as a wind block and it’s running good again but the pig won’t be finished until after dark….

Easiest way I’ve found to do a pig….

1. Kill it
2. Burn off the hair
3. Gut it
4. Smoke it.

Usually I load up the firebox and check it every 4-6 hours until done. The weather really tossed me a couple of knuckle balls this round…

Basically field dress it, put it on the pit and relax….

Snake and Mrs Snake just dropped off a bag of this hog. It is outstanding!

Excellent smoke flavor, nicely timmed, and fixing to be my and my wife’s
