There needs to be a THF luau. I'll volunteer my place, and can probably supply the pig, shovels, and charcoal. Somebody else's gotta set up the grass skirt dancers. There's gotta be dancers.
Happy Thanksgiving Snake! I am down with helping to put this together, and I really wanna try my new drill powered pig shaver chingadera. Can also bring a butt load of split oak wood, so no buying charcoal. Let's hear about that pig shaver, please. Can you say "chingadera" on here??

Thanks for the detailed pics. Noticed there's still stubble after burning the hair, does it burn off the rest of the way while cooking? Do you eat the skin? A little stubble has never been a problem. Don’t eat the skin. The shin becomes had and acts like a iron skillet or Dutch oven. Jes knows what's up.

Thanks for the detailed pics. Noticed there's still stubble after burning the hair, does it burn off the rest of the way while cooking? Do you eat the skin? A little stubble has never been a problem. Did you trap the hog? The reason I ask, is I have a friend who swears by catching them and feeding them for a week or two.

Did you trap the hog? The reason I ask, is I have a friend who swears by catching them and feeding them for a week or two.
Type of wood used? This hog was trapped by a neighbor. He runs several traps around here and any time I need a pig all I have to do is ask and it will be delivered if has has some. Using mesquite mostly with some oak.

Loaded the firebox about 10:30….just added a couple more pieces….good until morning…. Rolling along perfectly…..

Rain last night and wind today has really kicked my rear trying to keep and maintain the temperature. This is the pig after 27 hrs. Kept turning the pit trying to get control but Ended up using a sheet of plywood as a wind block and it’s running good again but the pig won’t be finished until after dark…. This is what they look like when done…. Pulled open and ready to collect the meat…. Meat in the pan and what’s left….

A lot of work, but worth every minute of it!! Looks good. Easiest way I’ve found to do a pig…. 1. Kill it 2. Burn off the hair 3. Gut it 4. Smoke it. Usually I load up the firebox and check it every 4-6 hours until done. The weather really tossed me a couple of knuckle balls this round… Basically field dress it, put it on the pit and relax….
