Devalve, slice it up. Dredge in seasoned flour and drop in hot oil. Cook til crispy, and enjoy!

I’ve always left the heart in the gut pile. This year I’m going to cook it with onions and mushrooms in butter. I’m fired up to try it. As much as my hunting buddy’s drink I’m sure it will be a hit, good or bad.

Make it 1/2 sober, early in the morning. When done correctly makes some delicious tacos, or just sautéed in a pan with butter & eggs/toast.

I threw hearts away for a long time too, wish I wouldn't have.

Deer heart guisado. Pick your favorite guiso recipe and go with it. Damn good!

We have always chicken fried it.

I saw an episode of MeatEater recently where the chef diced into small cubes and served it raw as a heart ceviche dish. Going to have to try this

I'm not big on frying it. But it makes some damn find tacos. Just like any other venison, don't go past medium rare. Cook it in butter, marinade it in a steak marinade. plenty of possibilities. I saw on one of the meat eater episodes the made hear ceviche. I would love to try that.

Ever noticed how the guts come in a neat pile? That's what you leave for the varmints.

I've done it all different ways; my favorite is sliced up, lightly pounded and seared hot and fast like duck breast. I stopped leaving hearts in critters a long time ago; one of the best items in my opinion and I've turned plenty of people on to it by not telling them what it is before eating it.

I never understood peoples hang up with this. First the heart is a muscle. Do you not eat ribs because they're close to the guts? What about sausage casing? Ever had dirty rice? These generations raised on McDonalds chicken nuggets sure do have sensitive palettes.

I'm 71 years old and have never eaten McDonald's chicken nuggets. I was raised on a dairy where we slaughtered our own animals and with the exception of my dad who loved liver and onions, no one ate any other organ. If you want to eat guts then more power to you.

I just finished up deer heart tacos for lunch. I sliced the heart up in thin strips to cook faster. Heated a skillet with a little olive oil and sautéed onions and peppers first. Then added in the deer heart strips and sautéed it with onions/peppers till it was medium rare. Heated up some fresh flour tortillas and made the tacos for lunch. Only way a deer heart goes in a gut pile is if it the deer was heart shot.

Those saying it’s not for them have never had it cooked and prepared the right way! Heart is just another muscle and a tasty one at that!! Tacos or guisada are both excellent ways to have it!!

I’ve tried it once prepared in a skillet as described above. it had a powerful flavor, but just too irony tasting for me.. and I like my steaks nearly raw..so that’s saying something. Thought about letting it “hang” in the fridge for a bit. Maybe I’ll give it one more shot

Soak it in salt water long enough to draw out any blood. Then prepare it how you like it.

Heart turned out pretty good. Oldest boy liked it better than the tenderloin. As my Papaw always said, “ Everything tastes great on a burrito!
