The big question is did you taste any freezer burn? I usually trim any tainted edges off & give trim to the dog. Other than that it cooks & tastes as good as ever!

The freezer burnt part may have been a little less flavorful, no big difference however.

cheers That was cooked perfectly. I take and soak the cuts that are freezer burnt in salt water and a little red wine vinegar for about an hour. Rinse it off in fresh water and then marinate/season to my taste. It takes the freezer burnt taste out of the cut.

Kmon1 gave the tip years ago to freeze them with the connective tissue still on, it protects the meat from freezer burn.
