I used to live in North Richland Hills, so I always paid way too much at Cinnamon Creek, but lets be honest they have a wide variety of products and all of them are great
Now we live in Waxahachie and although I made the drive to CC last year, I am looking for something closer. I've done internet searches and so far all I really see is Kubys; never tried them but always heard good things, however I did not see tamales on their menu and that is a deal breaker.
Thoughts?

Thoughts? Since you asked for thoughts, I will oblige. Process your own. Sausage, tamales, all sorts of things are fun & easy to make yourself in your own kitchen or garage. Field to plate, no one else's booger pickers have touched your meat.

Fair enough and I have most of the things I need to make it with, just finding the time is hard It really doesn't take much time if you are organized and ready to do it. I processed these 3 deer in a single afternoon last year. Cut, trimmed, ground, made into sausage, vacuum packed and into the freezer in just a couple of hours. And I know exactly how the meat was handled.

I freeze my meat and get everything in order. Whenever I can dedicate 2-3 days to processing, it's on. I've done a lot on my own, literally stayed awake for an entire weekend doing nothing but processing and cleaning by myself before driving back to work. NOT doing that again (5 animals into 5 kinds of sausage - alone), bout killed me. Help is AWFUL nice to have and makes a big difference

DYI it's EZ. Once you do it you'll never pay a processor again. Lot's of UTube videos to help you out. A must is a seal-o-meal, aka vacuum packer and a grinder. Start small this year purchase the vacuum packer and next year a grinder. Get a good grinder don't scrimp on a cheap/small one get one that will get the job done. When my boys were smaller it was a family project. One was deboning the other was cutting up trim for ground meat while I was cutting steaks & roast, wife was running the vacuum packer.

Joshua deer processing. I left CC due to the wait times and not impressed with the customer service, plus adds 30 minutes to my drive time coming from San Antonio.

Wenzels in Hamilton does great work, especially breakfast sausage, snack sticks, bacon burger, and all of their smoked sausages. Hamilton Quality Meats makes some really good boudin, chorizo, and summer sausage.

it's a completing the circle thing. It's not convenient, requires some up front investment and does take your time - few things more satisfying.

Just field dressed or do you have to quarter it out?

Never mind just saw they were closed on Sunday's. I have always wondered why some processors close on Sunday when everyone is coming back home from the lease. Seems like they should close on Monday.

Svelak (sp?) in Ennis (on HWY 34 east of town) is the best processor I've ever used. You will not be disappointed with his work. Just call to verify he's taking deer before driving over there, because once his freezer is full he'll stop taking them until he gets caught back up.

What Psycho said from several other people is what caused me to find Svelaks when I was planning a route home to Palestine from West Texas couple years ago. Stopped in and talked to them and really liked what they showed me and how they were open with me. Same song this year, depending on where I'm coming from.
Used to use Kuby's every year when I lived in Carrollton and even after we moved to Lake Texoma...but now from Palestine they are just tooo far. Also have used Eckerman's for everything from grass fed beef to tagged critters that my wifes family have fed us from there, and will again, route home allowing time and distance from west of San Antonio. Ron

After that, it's just minutes to break it down and get it in the cooler. God already put the lines in the carcass for you to follow with your $20.00 boning knife. And you don't get someone else's nasty meat that rode around in the cargo basket on the back of a dusty jeep for half a day with flies buzzing all over it

Wenzels always has someone available for drop off even on sundays and they will accept it either way. Hamilton Quality Meats has a number to call as well. Although last Sunday no one answered.
