Had some last night at a Halloween party! One of my friends made a big pile and shaped it like a brain. Good stuff.
Last I had before that was @ Augusta in 2019.

Love pimento cheese. Grating it fresh is a key step, as well as making sure the pimento is dried really well before dicing. I like a little finely diced sweet onion, and red pepper flakes in mine, like my Mom used to do!!

My moms recipe.
2 cups grated cheese ( I like sharp cheese)
Miracle Whip to proper consistency
Diced pimento's to taste (I used the whole jar.)
Salt and Pepper.
1 tea spoon vinegar.
1 teaspoon sugar.
I like it with good pickled Jalapeno's but I put them on the side. Not everybody likes it that way.
Served preferably on thick cut homemade sourdough bread. Always a favorite as a kid and still is. I haven't found a store bought brand I like yet, they all use too much sugar.

Lol Growing up my dad would use velveeta, pimentos and miracle whip. I think he also added paprika in there, but I haven't had his version in a very long time.
