I see lots of pics of people hanging game by front legs to clean.
Seems easier to me to hang by hind quarters and skin down towards the head.
It’s the way I’ve always done it so maybe I don’t know any better.
How do y’all do it?

back legs, head down. I think they skin easier hanging by the head so if skinning to take to processor whole skinned I have done that, but if processing myself then back legs

Have always hung mine by the neck. It’s how I learned 25 years ago and I can have one clean in under 15 minutes.

The ones I hung were always head down

Anything in the last 15 years I’ve gutted on the ground and headed straight to processor shortly after

Have hung by the head,skin, quarter, never gut. Cut legs.Then in ice chest. next day debone and bag, back on ice! Worked for 40+ yrs. up

Seems like a pretty even split.
It’s been along time since I gutted a deer as well. Always just reach on in a gently cut the tenderloins out.
God made those rib cages to hold the guts and they can just stay in there. 😁

Gut on the ground, hang em by the head, back legs touching the ground. If I'm not shoulder mounting I skin all the way around the neck, just under the head, and work it down to the ground. Shoulders off first, then backstraps/tenderloins, then hind quarters last.

Taught by a man that's been whitetail hunting for 60 years. No saw involved. He is like watching a machine. He's 30 years older than me, and I still can't keep up with him processing a deer.

I’ve always hung deer by the head. I gut them on the ground immediately after killing. That’s the way I’ve done it for the last 40 years.

always head down, maybe better in case of slip of knife and opens up the intestines, less meat to worry about contamination

To the OP,

I hang the animal by the neck to skin, but by the legs to age. I want all the blood in the hindquarters out of those large muscles.

I know a man that can finish one with a pocket knife on the ground faster than we can in a skinning room... he's probably done 10k in his life

I always hang by the neck if not mounting to skin. I have also found that a fishing filet knife is my tool to get the bark off. Then the front shoulders come off, back-strap, hind quarters and the neck for sausage or roast is last. Gave up gutting a long time ago as not enough there to mess with unless high temperature weather makes me do it then I still do it hanging by the neck.
