My favorite thing to smoke. 7 hours total, seasoned with MeatChurch TX rub and smoked for 3 hours, then heavily coated with sauce fir another 4 hours. Never covered. Ribs were perfect, almost fall off the bone, very moist, great flavor. Smoked with hickory.

250 until the last hour or so, they got done a little early and I don’t like wrapping meat with sauce on it so I dropped the temp to 180.

They look great, but I dont get cooking baby backs for 7 hours. Ive been cooking a lot of spare ribs lately and at 250-275 they are done just over 1/2 of your cook time.

It was once offered as a package with a bottle of TX Whiskey. This one was given to me by a coworker who’s wife is a distributor for SPECS.
