Can't have dove flautas without a little guac...I keep the guac simple, cilantro, salt and lime..

Looks good. THe only thing i would change is the pickled peppers. I take about 6 jalapenos and put them on a black iron skillet with the fire down low. As the skin starts turning black I turn them. It takes about 40 minutes to do them right. I julian slice them and use them on any Mexican dish. The only way I like jalapenos. The flautas look amazing. That might be on our dinner table tonight.

Great idea. I am going to try to get some dove on Sunday. If we have any luck i am making these for sure. Guac looks great i might add some onion. Good eating for sure.

I been eating all the dove just about. Half limit in the freezers, another 5 in the fridge. And just shot this limit this afternoon , in a little over an hour. Poured a whiskey on my last bird. smile ani

Dumb question,…..but what prep did you do on the tortillas prior to rolling them? Looks as if they are oiled or dampened with something. Thanks

Not a dumb question, very good question. Got to soften them tortillas up first in hot oil. I get a little frying pan, little oil, do one at a time, just get them soft, put on plate, like I show second and third pic. After each tortilla, add a little oil to pan as needed…if I’m doing enchiladas, I’ll soften up a big pile of corn tortillas on a plate, one at a time.

Good luck, don’t over cook. I think I overcooked mine a little. Looking at my time stamp, looks like I did about 4 minutes or under. I had it a little over 340. I think 350, maybe 3 minutes.

I noticed one of the steps I forgot to post, I also included cheese. 1 dove breast, half a jalapeno (2 quarters), and cheese!!
