A high amount of cash loss is all inside folks. Credit and debit are a better bet.
But I still run into places that are cash only.

Really doesn't bother me, much quicker getting through the line as well.
Don't have to worry about making a trip to the bank and as mentioned above worry about employees with thieving hands.
Also a big time saver from having to sit and count cash when it would all be done electronically for you. Again one more less thing to have to worry about.

You're just now seeing signs for this? Welcome to 2021. Many businesses and services haven't accepted cash for several years now. Even most paid parking lots and meters don't accept cash anymore. Electric payments are easier to track from an accounting perspective, are way faster in the checkout line, they deters theft by employees, and no gross dirty coins/bills. And if you have reward credit cards, you earn points.

We ran a fireworks super store and stand for over 20 years. When we starting taking CC's the amount of cash we took dropped dramatically. Was great for us.
I appraised a ranch for an estate last year, the guy offered to bring cash to our office, we would rather have a check, can be deposited from the office etc.

I have only ran into that twice. Both times was at a medical office. The latest one was just a few weeks ago. They didnt accept cash OR CHECKS. I told them to bill me. When I got the bill I sent them a check. LOL
