Spitfire made an amazing roast for dinner yesterday. So I asked for the same for breakfast this morning.....she looked at me like I was an idiot (which happens quite often now that I think about it) but served it up as requested...... Nothing wrong with that meal for breakfast. This is coming from an ex-shift worker. My dad and I both worked nights a whole lot and mom would have hamburgers cooked when we got home. It was worth the extra miles driven after a long night at work to have a home cooked meal with my parents, then drive back to my house to get some sleep. Wish I could do it one more time, miss them both so much.

Looks reminiscent of barbacoa with potatoes and eggs!
In college many times my buddy would put leftover fried fish for the meat in morning tacos... it never was bad.
