I’ve got some elk on the way and looking for a different premixed sausage seasoning, specifically breakfast patty. I’m not big on maple syrup, maybe low heat so the kids will eat it. My all time favorite patty sausage is from Cracker Barrel believe it or not. Over the years, I’ve made my own mixture, tried AC Leggs, backwoods, and a few other popular ones on amazon. I know someone out there can point me to a a solid packaged mix I can order online or over the phone soon! Let me know.

We like the Legg's breakfast sausage mix. That is what my daddy always used. He could get it with or without sage.

Leggs or we always used Old Plantation growing up and I have used it many times since.

Legg's Old Plantation #10 blend is good and if you want it hotter their #109 blend. If your looking for something with a breakfast sausage with good garlic flavor, Zack's Spice company Polish sausage seasoning is great.

Legg's Old Plantation #10 blend is good and if you want it hotter their #109 blend. If your looking for something with a breakfast sausage with good garlic flavor, Zack's Spice company Polish sausage seasoning is great. I have probably made over a ton of sausage with Old Plantation and never had a complaint. I used to sell it at my meat market to.

It may be hard to find outside of East Texas or Western Louisiana, but for breakfast sausage I have come to rely on TexJoy Sausage Seasoning, with a few modifications. I take a 12 ounce jar of seasoning, and add 2-3 Tbsp of cayenne pepper. Two Tbsp is still pretty mild for me, but not everyone likes food as spicy as I do. For five Lbs of meat I add three Tbsp of seasoning (with the cayenne already in it) plus one Tbsp of ground or rubbed sage.

leggs chorizo is pretty hard to beat. It's good but La India is the best IMO, make sure you pickle with vinegar. Used to make 100 -150 lbs of La India chorizo each year and it never lasted. I like to make mine as lean as possible, with just enough fat.

For breakfast sausage Old Plantation is my favorite (no sage for me). #10 or Hot Breakfast. I like to use Legg's as a base per directions and add a little more to my liking along with more minced garlic, black pepper, red pepper etc. It's just good.
