Stuffed with: Cream Cheese, Colby Cheese, Smoked Brisket, Bacon Bits, and chopped up seeds and stems from a few of the peppers.

Smoked (Post Oak) @ 275 for 1.5 hours. Put some Stubs BBQ on half of them (kids don't like bbq sauce) and suck them under the broiler for a few mins.

I've never heard up chopping up and eating the stems before.

I know people that chop up and regularly use the stem. As long as they are fresh and still full of life, the stem and cap gives great and flavor to slow cook stew type dishes for those who don’t actually want spicy food. They’ve told me that 24-36 hours after being picked, the stem is trash however.
