Tried a reverse seat on a 2.5 inch thick tomahawk tonight. Started on the smoker with pecan at 225 for 1.5 hours until It was 115, then seared over pecan for 2 minutes per side, next time I’ll do 1 minute. Was shooting for medium rare, I think I missed it bang

Looks pretty good, but seems dumb to pay for a bone to show off. Your prices must be a lot lower than ours, tomahawk ribeyes are up in the $18-20/lb range!!

It does look beautiful tho!!!

I don’t disagree. It was 2.5 pounds for $35. We normally buy fillets, 1.5 pounds for $55, so for us, even with the bone, it’s a lot cheaper. This was just something I wanted to try, probably won’t do it again.

It was okay. To much meat to seasoning/char ratio for my liking. Way over cooked for my liking, but I somewhat expected that. I’d rather have a good 1-1.5 inch thick ribeye than one this thick.

I agree I’m not in to the super thick steaks. I normally have my cut around an inch and quarter. They come out just about a lb per ribeye when I do that
