Decided to cook just the flat for some chopped sammiches and Texas twinkies today. Started last night at around 11:30pm. 13 hours and 28 minutes later it was very tender with a probe so I pulled it, wrapped in pink paper and towels and now it’s resting in a cooler for a few hours.

No idea how it will be, I’ve never split a brisket before. Might be a win, might be a fail. I can guarantee I’ll never split another one again.

Sounds like a plan. I like to use a chuck when I'm just gonna chop it.

Smoke a brisket. Chop some of it. I cut the top 1/4 of the jalapeño off if I’m only doing a few so they hood more filling. Combine cream cheese and sharp cheddar, place in the jalapeño, top with chopped brisket, wrap in thick cut bacon, place on grill. I like the fire to kiss the bacon but not engulf it.

Yes, definitely thin cut for wrapping, and getting properly done. Thick cut doesn't wrap well, and the peppers are usually mush before the bacon is done!!

Depends on how you like your bacon. I tend to use thin bacon for wrapping too, but mostly for the others who eat it. I like my bacon chewey, not crisp.

Thin was the plan, until I opened the fridge. confused2 Had to use what I had. When I use thick cut I grill it, let the flame kiss the bacon. It develops a very slight crunch but is still very much a soft bite that’s easy to bite threw, pepper is still crunchy
