Not really a poll of sorts, but how do you prefer your shrimp and tortillas??? Had enough cooked shrimp left to try both ways, so dinner was one of each. Cleaned, seeded, and de-veined Hatch Green Chiles. Keeping the cast hot in the oven helps out too!!

I vote for enchiladas.

Guess I could have stated it better. These two options were just to try those new Hatch's I got, and see how they tasted and the heat. Was afraid they might be too hot for the girls. I wanted to try a couple good ways to enjoy them, and the shrimp was just bonus.

There are so many other ways to enjoy shrimp, and I didn't mean to leave any of them out. I thought these were perfect with the cleaned Hatch's, with just a little cream cheese, sour cream, cheese, and I only added cumin, garlic, Magic Dust, and cayenne to the mix.

Quesadillas or enchiladas? I vote yes. You may not have meant to start a poll, but you've got one anyhow!

Bet they were both way good, I would go with the Quesadillas only because I am not a big sour cream fan.

It all depends on my mood that day, I swing both ways when it comes to that.

They both came out really good. My only complaint was with the chopped onions. Even tho they were labeled as "sweet onion", they were a little too strong and crunchy, and next time I will use either my sautéed ones in them, or diced green ones. They certainly were not Tex-Mex, or Vidalia's!!!
