I finally got time to try my hand at making some sausage. I did a 5lb test batch to get the seasoning right. I did two recipes (Herbed and Italian). Both had fantastic flavor but were dry. I'm going to try another batch soon but bump up the fat to about 30%. The only fat I could find what cut from the top of a pork roast. I called Hersh's in Plano this morning and they said they have fat back so I think I'll go with that next time.

Herbed wild pig/venison sausage

Try #1, Aug 2021

13 oz lean venison
19 oz lean pork
8 oz pork fat
All cubed and cold, nearly frozen

12.5 g sugar
17 g kosher salt
16 g chopped garlic
8 g fresh thyme
8 g fresh Rosemary
8 g fresh sage

1/8 c ice water
18/ c white wine

Mix meat and seasoning, grind coarse then fine, add liquids and mix for 60 sec.
stuff in casings then refrigerate

Notes: needs more fat

Wild pig/venison Italian sausage

Try #1, Aug 2021

13 oz lean venison
19 oz lean pork
8 oz pork fat

2 T fennel seed (toast & grind)
1T kosher salt
1 T chopped garlic
2 tsp fresh ground black pepper
1.5 T chopped parsley
1 T red pepper flakes

1/8 c ice water
18/ c white wine

Mix meat and seasoning, grind coarse then fine, add liquids and mix for 60 sec.
Refrigerate or stuff in casings

Notes: needs more fat

I would browse the forum for recipes and watch some YouTube videos, some in the comments or whatever will list the recipes. I like to keep my sausage recipes simple, you can see many that have everything including the kitchen sink, easy to spend some money on spices etc. and some are harder to find, not worth it when only a few ingredients are needed to make great sausage.

I agree that simple can be and usually is better. My biggest challenge is going to be getting the texture and fat content where I want it. Nothing a little trial and error wont fix.

That all looks great to me. I can see how making your own can get addicting. So much fun experimenting with flavors!!

I cooked more by the time I was 10 then my wife has in her whole life. She allows me to make sausage in her kitchen... Im hoping we will make a run of some kind of BBQ'ing sausage the first month in the new house, hoping the island will work out well for it.
