Girls have pinochle tonight, so fending for myself and eating last of the seafood I had. Peeled and de-veined the 1/2# of left-over large shrimp (14-16). Since they would probably be a little tougher, I cut them up, sautéed them in butter, garlic, thyme, and smoked paprika. Then drained and left them in the fridge to get cold.
When I was ready to eat, I added the sriracha aioli, celery, green onion, S&P to them and fixed sandwiches with a couple rolls. The cayenne on top was nice!!! Used the left-over L&T for a salad with Parmesan Cheese and Balsamic glaze.
