Hey Blank ,

How do you keep corn tortillas from tearing so you can roll them ?

I was trying to making chicken chimichanga, lightly frying a corn tortilla rolled with chicken and cheese but the they break apart immediately. I even heated a few up and it did t help .

I wrap them in damp paper towels and nuke them for 30 seconds.

Yes, really only two ways to soften for rolling or folding - steam or fry in oil. Really kinda depends on what your next step is. If you steam them, you can just spray a mist of water on each, wrap in a moist paper towel, then put in a Zip Lock bag and microwave for 30-60 seconds. DON'T seal the bag, you'll blow it up! Ask me how I know?

If you dip them in hot oil, you are not trying to cook them, only get hot. Usually 5 seconds Is plenty the lay on paper towels to drain, while staying warm. Hope it turns out great!!!

PSA: If you steam them, be VERY careful if you are gonna fry, 'cause the water will blow up your oil!!

You can put them in a microwave for a bit. Take them out and wrap in foil will keep them soft and pliable.

You got me wanting Mexican tonight, so the girls requested Taco Salads. Here's another way to do your corn tortillas after heating them in oil. Do a little longer, like 10-15 seconds, then make your little bowls for them using a muffin tin. These are perfect of the 6-8" corn or flour.

I usually do this size for lunch, but for the salads at dinner, I do larger ones out of 10-12" tortilla in my molds and bake for 10-12 minutes.

I’ve used a cookie cutter and place them into muffin tins for minis. No waste as you can make chips out of any excess. That bowl pic above reminded me to share.

I have an 18 yr old who thinks taco night is mandatory. Always make more meat than needed for a breakfast scramble. Not news to this crowd but it always puts a smile on my face when I can use leftovers to make a 2nd best meal.

Tortillas are the bomb!

I think the are messing with the recipe because I've noticed the same thing making enchiladas, try to roll them and they break apart. You are supposed to use masa flour. Plain old corn meal just breaks apart. Jus in case some folks don't know, you need hulled corn (Hominy) but instead of grinding it into grits it is ground finer- into flour. When you clean a pot that was used for grits there is a lot of "glue" but if you boil corn meal instead of grits- pot is clean. ou need tha "glue" to hold a tortilla together. In an event I thought a couple of manufacturers are mixing in ground corn meal to save some money..

Corn Mesa
Salt
Water
and my secret ingredient melted butter in the dough. Have to play with it to get the right taste, but get the right consistency as well.

Press them out on a tortilla press, spray both sides with cooking spray and toast them on a flat top or cast iron skillet.

Chimichangas are made with flour tortillas, basically a fried burrito. You were making a taquito, (one of my favorite foods) which is made with a corn tortilla. You have to heat the tortillas first to get them to roll. I have done it either by heating them in a stack in the microwave (if I am in a hurry) or LIGHTLY frying them first in hot oil. You can make flautas, which are like taquitos but with a small rolled flour tortilla.
